Easy Quesadillas

  1. Place cheese in between two tortillas.
  2. Place in frying pan over medium flame
  3. Cook until ready
  4. Cut into pieces and serve with guacamole and/or salsa

Please note: This recipe can be fried without any oil, with Pam cooking spray or oil. For best flavor fry in oil.

  1. Spread tomato sauce on tortilla
  2. Sprinkle cheese on top
  3. Garnish with your favorite toppings
  4. Heat in oven at 400 for approximately 10 minutes

 

Easy Grilled Chicken Tacos With Guacamole

  1. Grill chicken as desired
  2. Warm tortillas covered (to retain moisture)
  3. Fill tortillas with chicken and guacamole

 

Easy Guacamole Recipe

  1. 2 avocados
  2. 1 small onion, finely chopped
  3. 1 clove garlic, minced (optional)
  4. 1 ripe tomato, chopped
  5. 1 lime, juiced
  6. salt and pepper to taste

Directions: Peel and mash avocados in a medium serving bowl. Stir in onion, garlic, tomato, lime juice, salt and pepper. Season with remaining lime juice and salt and pepper to taste. Chill for half an hour to blend flavors.

 

Easy Tomato Salsa

Add in chopped Jalapeno peppers to taste.

Variation: Saute all ingredients in a frying pan with a little bit of oil on a medium flame for 5 minutes.

 

Easy Tostada Salad Bowl

Place tortilla in between 2 large ladles
Place in deep fryer until crisp.
Fill with your favorite salad.

Variation:
Fry tortilla flat until crisp
Pile your favorite salad on top

 

Easy Totopos Recipe

Cook Time: 10 minutes, tops

Ingredients (serves two as a snack):
6 toritllas de maiz (corn tortillas)
cooking oil
salt

(optional, to serve the totopos with)
refried beans
ceviche
guacamole
or a good salsa (pico de gallo works well)

Directions:
1. Take the tortillas and cut them into 1/8th “pie” slices.
2. Heat up your cooking oil in a pan, then deep fry your tortilla slices until they’re crispy (should only take about 15 seconds per side)
3. Remove them to a paper toweled plate, to remove the excess oil from each of the fried tortilla chips.
4. Sprinkle a little salt on them.
5. Enjoy!
